E3 Visa Question

I'm currently attending a semi-target school in the US as an international student. I'm starting at looking at applying for internships and ultimately full-time roles in banking or aligned industries in the US.

An advantage I have in this is that as I am an Australian citizen I have access to the E-3 visa program (which is similar to H1B but has no effective cap on visas, no maximum stay and provides some greater freedom around renewals and changes in employer).

Would it be worthwhile applying to firms who only sponsor applicants with H1B STEM extensions and/or have historically only sponsored a limited number of applicants?

Additionally, are there any firms with a strong Australian presence that I might be able to reach out to?
