Would appreciate insights into how the Career Prospects for IBD and S&T differ between MiM and MIF (Master in Finance) programs and whether the level of difficulty of getting into the programs is the same. I'm specifically talking about the HEC MiM vs MIF, LBS MiM vs MiF and LSE MiM vs MiF. Thank you!

My $0.02... Acceptance difficulty can vary a lot by school and based on your profile. If you already have a clear finance background you might have a better shot at a Finance program. These programs will also place "naturally" into IBD and S&T type positions and have better targeted networking, although you can also expect more internal competition for good spots. All in all, I would go for a MiF over a MiM if you're sure about going for IBD/S&T. Regarding school comparisons, there was a thread going around in the last two weeks about which schools were placing best.
