Hobbies & interests on banking CV/resume
Okay, I'm a bit curious about how these set of interests would be perceived on a banking CV:
Table tennis, football, 800m races, thriller drama reviews, English league and UEFA football, pre-modern combat, gym dumbbell exercises, wrestling, East-Asian culture, psychology, medical philanthropy, card games, Elrond/Hobbits and Tolkien’s lore, ludo (game), draughts, multi-player video games, community outreach programmes, Latin, Classical Greek, student association political campaigns, global cross-cultural exploration and comparison, chess, nutritional counselling, Greek and Roman mythology, monopoly (game) and swimming.
The interests line is super important as it allows the person reading it to try and understand you as a person better and, hopefully, resonate with at least one of the things you mention, which they can discuss with you in an interview. So, to answer your question more directly, any of the above would be perceived well. The only I would consider scrapping altogether is "gym dumbbell exercises". There are too many, however, and the rule of thumb is to keep it to one line and list them in alphabetical order.
Up to you which ones you go for, but try to show a breadth of interests you can discuss in interviews. Don't list 8 sports, for example. I would also recommend not wasting too much space with interests such as "student association political campaigns" - but that is your call. Personally, I have my favourite restaurant (an American-only chain, and I'm from the UK), and it always gets brought up in interviews.

Again, keep it to one line. I know you're eager to discuss your interests... but it isn't the decisive factor in an application. Scrap the "Favourite movies/ series" line - choose one and add it to your interests. Then, list them in alphabetical order.
East-Asian culture might get you some strange looks if you’re not Asian
I'd say maybe try to condense each specific interest down into a more broad category.
Movies (thriller drama reviews), football (English league and UEFA football), history (pre-modern combat, Egypt and its pyramids, East-Asian culture, African royal families, Latin, Classical Greek, global cross-cultural exploration and comparison, Greek and Roman mythology), etc.
As others have said, try to condense your interests down into one line (or two if you can absolutely afford it).

do you think it is a good idea to move the work experience to the top and move education to a lower part of the CV in order to make my banking experience the first thing that is seen on the CV? Or is it safer to stick to the conventional format of listing the education first (could deviating from the usual format get my CV discarded)?
No, keep education at the top. Got to be spam, no way you’re putting “Sherlock Holmes” under interests
Put your University at the top, when you graduate is when you move it to the lower middle section & your resume has to get past the initial screening for keywords I believe
